The Rollo Herb Festival 🌿 in Liguria is an event that celebrates nature, traditions and local crafts.
It is held in the charming village of Rollo, in Andora (SV), every year in June.
During the event, the village is transformed into an open-air garden: numerous exhibitors offer herbs, officinal herbs, organic products, crafts and Ligurian specialties.
It is a festival that combines gastronomic culture, nature and conviviality in a magical atmosphere between the sea and the Ligurian Apennines.
Regional Recipes: Pansotti with walnut sauce
🥟Other Ligurian specialty: pansotti (or pansoti). These are ravioli filled with herbs and ricotta cheese, with butter and sage and with the typical walnut sauce.
They are mainly prevalent in the Riviera di Levante, but those in the village of Rallo, which is on the Riviera di Ponente, take the opportunity to buy garden herbs and wild herbs, then at home can try their hand at making pansotti and perhaps even walnut sauce.

Ingredients (for 4 people)
- 150 g of walnut kernels
- 30 g of stale bread (without crusts)
- 140 ml of whole milk
- 30 g of grated Parmesan cheese
- 1 clove of garlic (without soul)
- 3 tablespoons of extra virgin olive oil
- Salt to taste.

To which wine do we pair this good regional dish that has a fatty component, given by the ingredients in the walnut sauce?
Without in any way detracting from the Ligurian wines, all of which are interesting, as far as those from our winery are concerned, we propose our own Riesling dei Prassi as a pairing.
Praxis is a dry, sparkling white wine with fruity overtones, rather light and definitely drinkable.
