Wine & Food and the Regional Recipes: from Piedmont to Oltrepò

🍽️ For our appointment with Regional Recipes, this time we move without going too far.
From Piedmont to Oltrepò the distance is just short, less than an hour! 🛣️
And which recipe? That of Baci di Dama. Perhaps not everyone knows that they are of Piedmontese origin-in fact, they are also called Baci di Tortona (province of Alessandria)-and that with our moscato dell’Oltrepò Pavese they are enchanting! 🪄

Baci di Dama Recipe

Making these Piedmontese cookies is super easy.

🧈We mix soft butter (100 gr) with 100 gr sugar and a pinch of salt🧂 until smooth.
We add the “00” flour (100 gr), hazelnut flour (120 gr) and mix everything together, until we obtain a well-compacted mixture to be left to rest in the refrigerator for about 30 minutes.
Once the dough is ready, we create slightly flattened balls that must rest for another 30 minutes in the refrigerator.

Transfer the cookies to baking paper on a baking sheet and bake for about 25 minutes at 160° in a ventilated oven. They will be shaped like hemispheres. Once baked and cooled, we spread the hazelnut cream by joining two hemispheres at a time.

🥂Tradition perhaps dictates that baci di dama should be enjoyed at tea time, but we suggest them at the end of a meal with a glass of Moscato IGT produced by our winery: with its fantastic golden hues and intense aromas and flavors, it knows how to be a real star at dessert time.
