🛒 Ingredients (for 4 people)

  • 350 g of spaghetti
  • 2 white zucchini
  • Extra virgin olive oil (for frying and seasoning)
  • 2 cloves of garlic
  • salt to taste.
  • mint leaves for fragrance, for a tantalizing flicker and for decoration

  • Cut the zucchini into thin rounds and let them rest in a colander with a pinch of salt for about 15 minutes.
  • Fry them in hot extra virgin olive oil, a few at a time, until golden brown and crisp. Set aside on paper towels.
  • Cook the spaghetti in plenty of salted water. Drain them when al dente, keeping some of the cooking water aside.
  • In a skillet, heat a little oil with the crushed garlic cloves. Add the fried zucchini and season to taste.
  • Combine the spaghetti in the pan with the zucchini, stir well, and add a little cooking water if needed.
  • Serve immediately, with a few mint leaves
  • Grated cheese is not needed, everything is already good as it is, but those who are used to it can add a sprinkling of unripened pecorino.
