Our Sangue di Giuda DOC is a sweet red dessert wine.
It has deep notes of red fruits, making it ideal for accompanying desserts made with cherries, blackberries, raspberries, blueberries, dehydrated plums, strawberries, and currants. Follow the steps to prepare a soft cherry sponge cake roll to enjoy it with:
- 4 eggs
- 75 g sugar
- 50 g of 00 flour
- 1 sachet of vanillin
- 1 jar of jam with cherry pieces
- icing sugar
For the sponge cake you need to divide yolks and egg whites into two different bowls. The yolks should be combined with the sugar: work them with a whisk for 5 minutes. Add the vanillin and flour a little at a time until the mixture is smooth and homogeneous. Whip the egg whites to stiff peaks to incorporate them into the yolks.
Mix well and then pour the mixture into a baking pan lined with parchment paper. Level with a spatula.
Bake at 180° C for 15 minutes. After baking, turn the sponge cake upside down on a clean dish towel. Peel off the baking paper carefully so as not to break it and use it to roll it up. Let it rest for an hour, then roll out the roll and spread cherry jam on its surface. Rewrap the roll in plastic wrap. It should be kept in the refrigerator at least an hour before serving. Complete with a sprinkling of powdered sugar.
The extra touch in this recipe? If the dessert will be served only to adults, during preparation fill with our Judas Blood a half cup in which to soak chunks of pitted cherries. Add them when you spread the jam layer.
Happy dessert with the Blood of Judas Francesco Maggi!
