Here’s a recipe for a dish that turns a simple dinner into a trip to the beach (since the vacations are still a while away…) 🌊

A perfect mussel peel
Ingredients (for 4 people):
- 2 kg of fresh mussels
- Ground black pepper
- Extra virgin olive oil
- Lemon wedges
- Chopped fresh parsley (optional)
Preparation:
Cleaning the mussels: discard the broken or open ones, and from the others, the fouling should be removed with a small knife, the barb should be peeled off,and then rinsed well under running water.
Cooking: water is heated in a tall, large frying pan with a dash of evo oil, pouring in the mussels and immediately adding a generous grinding of black pepper.
The mussels should cook for a few minutes, until they are fully open.
Once ready, they are served with toasted bread, lemon wedges and possibly some chopped parsley.

P.S. Why is parsley left as optional?
Maybe because it has a bad habit of getting in between the teeth… but with mussel peppered paired with our Armonia bubbles, lunch or dinner will be so good that diners will forgive all! 😉
