Wine & Food: Panna cotta and Judas Blood

We are all already familiar with moscati, passiti, brachetto, but here in Oltrepò , Sangue di Giuda, a sweet sparkling red wine for dessert, is traditional.

The characteristics of the Blood of Judah

This wine, which is known to give off scents and flavors of berries, berries, and plums, goes well with those desserts that have plum jam, berry jam, or sour cherries among the ingredients. 🍒

Müntarüs, the name of this ruby-red wine of ours with purple highlights and a cheerful froth, specifically has distinct notes of blackberries and blueberries. 🫐

Recipe for berry panna cotta

Fresh cream, clearly, is the basis of this dessert. Parmalat offers the following recipe for 4 people:

Fresh cream: 500 ml
Berries: 200 gr
Gelatin sheets 8 gr
Vanilla bean: 1
Honey 50 gr
Brown sugar 50 gr
Molds

Gelatin sheets should be soaked in cold water for 10 minutes.

Meanwhile, the Fresh Cream should be heated in a saucepan with the vanilla seeds until boiling.

When the cream is hot, honey 🍯and well-squeezed gelatin sheets are added, working everything together with a whisk.

The mixture should be put into the molds, which will then make a 4-hour refrigeration passage.

The berry sauce takes only 10 minutes: mix brown sugar and berries (there are also frozen ones), making sure the sauce does not burn.
It should have the consistency of a thick syrup.
It will serve to garnish and flavor this fresh dessert, to be enjoyed with a good glass of Sangue di Giuda from Cantina Francesco Maggi.
