📃 Pistachio parfait recipe

Ingredients:

  • 2 eggs (yolks and whites separated)
  • 200 g of sugar
  • 50 g of water
  • 110 g pistachios (plus 50 g unsalted for the grain)
  • 500 ml fresh cream
  • 2 tablespoons of pistachio paste

Preaparation:

  • Prepare the syrup: dissolve sugar and water in a saucepan.
  • Whip the egg whites to stiff peaks and add half of the boiling syrup flush.
  • Whisk the egg yolks with the rest of the syrup, again flush.
  • Grind the pistachios to a fine flour to combine with the egg yolks.
  • Whip the well-chilled cream and gently incorporate it into the pistachio mixture.
  • Combine the beaten egg whites, mixing from the bottom up.
  • Pour the mixture into a mold lined with foil and leave in the freezer for at least 6 hours.
  • Decorate with chopped pistachios

  • 150 g dry cereal cookies
  • 80 g of melted butter
  • 1 teaspoon brown sugar
  • Mix ingredients until you get a soft dough
  • Press the mixture (let it be 1-2 cm thick) well into the bottom of the mold lined with baking paper
  • Refrigerate for 30 minutes or place in the freezer for 15.
