Wine & Food: Tomini with Speck and Pinot Noir

When the warm weather takes hold, it is easy to smell an inviting barbecue aroma coming from the cottages.

In grilled meats, unfailingly tasty tomini with speck is a must. We pair it with a good glass of Pinot Noir.

A tasty cheese

Tomini are small, round cheeses. The aged ones have a tasty, soft, creamy paste with a light yellow color and a white rind.

Tomino can be made from cow, goat or mixed milk.

It is customary to wrap the tomini in slices of speck (or bacon) served very hot: once opened, the heart of stringy cheese is enjoyed along with the crispy speck.

Equally refined are the processing techniques of the dish’s two ingredients.

🔴The speck in fact goes through salting and flavoring with herbs and spices, cold smoking for about ten days and finally curing for a period of 5 months.

🟡Tomino, on the other hand, is processed with hot rennet, moves on to the brine curing stage, then to maturation for several weeks and ends withaging, which in some cases is accompanied by natural mold.

You can lay the warm tomino on a crostone, adding a little currant or raspberry jam, or you can make tasty skewers of mini tomini on the grill.
